The new quick service restaurant in Joussard is now open for business.

Specializing in pizza with regular or thin crust, this popular meal entrée is available with numerous toppings. Made fresh from the sauce to the final ingredient of your choice, it can be teamed with fresh salads or soup for a complete meal.

Owner-operators of this venture are Linda Cox and Sharon Cox. These ladies were married to cousins. Eight years ago Sharon’s husband passed away and a few years later Linda’s marriage ended.

Since then both have been active in their communities.

Linda was busy with the operation of the very successful High Prairie Subway.

Obtaining the franchise for Subway in 1996, she erected her own building to house the restaurant and operated it for ten years. She then sold it, but the idea of entrepreneurship had taken hold. When the opportunity arose for another business, she acquired a partner, Sharon Cox.

Sharon was also looking for something to utilize her culinary skills. As well as being busy running her farm operation with her family, Sharon volunteered at St. Mark’s Church in the Second Wind Boutique, also making the rounds with the confectionery cart for the High Prairie Hospital Ladies Auxiliary and the patients there.

As well, her appointments to several Boards kept her informed of local issues and in touch with ordinary citizens and their concerns. Theses occupations were meaningful but she still wanted to exercise her expertise in the cooking field.

So when she was approached to enter a partnership in a Quick Service Restaurant, she never hesitated.

Sharon and Linda’s first step was to hire Diana Coutu, a two-time Canadian Pizza Magazine Chef-of-the-Year champion.

Diana is an internationally recognized gourmet pizzaiolo and co-owner of Diana’s Gourmet Pizzeria in Winnipeg, Manitoba. Diana helped the neophyte pizza entrepreneurs design their restaurant and menu.

She recommended the Picard oven for its versatility and cutting-edge technology.

Sharon and Linda travelled to Columbus, Ohio to meet with Diana and watched her compete in the pizza-making championship at the North American Pizza and Ice Cream Convention held in February.

Diana also competed at the International Pizza Expo in Las Vegas, Nevada in March using the Picard oven. The Las Vegas convention brings together pizza suppliers from around the world to showcase the newest innovations and products in the pizza industry.

This three-day event is attended by pizzeria owners looking to enhance their menu offerings with the most up-to-date techniques of the industry.

Sharon & Linda are both excited about their new venture.

The restaurant is located in Joussard across from Larsen’s General Store on 1st Avenue S.W.

The new restaurant features the latest in pizza ovens, a Picard LP200 made in Montreal, Canada, by the food services manufacturer, Picard ovens.

The purchase of this oven was researched extensively by Sharon & Linda when they traveled to Columbus, Ohio and Las Vegas, Nevada attending the pizza conventions in those cities.

This oven represents the latest in conveyor oven technology. Pizzas are baked on a granite slab conveyor. The conveyor has one inch natural stone slabs to produce the taste of an Italian stone hearth crust.

The granite gathers and transfers heat to the pizza crust at crucial times in the baking process, creating yeast reactions that provide proper “lift effect” and moisture retention. This results in a crispy tender crust every time.

If you are tired of the same old pizzas, now you have a chance to try their new thin crust with your choice of numerous fresh toppings.

If you are looking for a change, try a change for the better, a fresh salad to go with your pizza.

They don’t make the pizza until you tell them what your toppings are. And they are always fresh!

If you’re craving a pasta dish, they offer lasagna, and spaghetti at a reasonable price. A baked Fettuccini in the classic Alfredo sauce is also worth a try. Chicken or shrimp can also be added to this pasta delight.

Soup and salads are also available. A different soup is on the menu each day served with a dinner bun. Your favorite salad can also be requested and made fresh from crisp lettuce and the added ingredients for your particular order.

A great snack is an order of chicken wings with choice of numerous sauces.

In the line of drinks are the usual ones that are available with slushies coming soon. As well, for those with a sweet tooth, cookies are offered, these are baked daily.

The newest concept in pizzas is the “take and bake”.

Here the pizza is custom made to your order, you take it home and bake it in your oven when you want it. A fresh baked pizza every time.

Whether you live in Joussard, or here for the summer, camping on the weekends or maybe just passing through, they would appreciate your dropping in at Pizza Bistro and saying hello. You will be glad you did!
